Beef with Raisins

Sear 1 lb or so of seasoned 2 ” cubed beef stew meat, or a whole hunk of brisket if you prefer and remove to a plate/ Add in 2 large chopped carrots, and 1 medium chopped onion and let soften a bit, add salt and pepper/ toss in 3-4 cloves rough chopped garlic and let everything caramelize for a few minutes before deglazing with something you are drinking, I had a Cotes du Rhone so I used that,  note that Cognac would not be a mistake here as well/ Stir in 2 tbsp tomato paste, 2 cups good dark stock of your choice, and fresh chopped rosemary, at least 2 sprigs + roughly 1 1/2 cups of raisins/ cover and bring to a near boil, knock down to lowest heat and simmer until beef is extremely tender/ adjust seasoning and serve with soft buttered Polenta and crusty bread
