Not a bad start…

Bowl full of Spicy Goodness….Thai inspired Fish Soup with Greens

Blitz 3-4 inches fresh, peeled ginger, handful of cilantro, 4 cloves of garlic, 1/2 a large jalapeno, 1/2 a bunch of scallions, the zest of one lime, a sprinkle of sugar and some crunchy salt, + splash of vinegar until a rough paste forms/Fry this glorious mess in hot olive oil and when fragrant pour in 8 cups pork stock, and 2 cups coconut milk and simmer roughly an hour or so/Meantime-Braise some spicy chopped greens (dandelions, kale, chard) with caramelized onions and set aside/Make a nice pot of Jasmine rice with fried garlic and butter, set aside/Cook hunks of firm white fish in broth, (tilapia, cod, rockfish etc)/To finish plate rice in bowl, greens over, ladle broth and fish in, cilantro, Thai chilies, lime wedges, Green chile sauce, scallions….Thai beer, Rose, and the ones you love will complete.
