Pork Chops Braised with Gewurztraminer and Crimini

Sear 4 seasoned chops in frothy butter and set aside/To pan add 1 fat chopped shallot and a few chopped cloves of garlic-saute/deglaze with what you have on hand-this happened to be Gewürztraminer specific as I planned on using what was left in the fridge from last night/When alcohol burns off a bit, tip in some good chicken stock, roughly a cup or so/a spoon full of tomato paste and some fresh herbs next-Thyme works nicely/Meantime in another pan sear crimini mushrooms in the size you like in hot butter and garlic and add to pan as they’re done/bring sauce to a light bubble and add chops and accumulated juice back in, simmer until chops are near melting/Adjust seasoning and add a knob of butter to make your sauce gloss…

Serve with buttered Yukon gold potatoes awash in fresh chopped dill and a glass of what pleases you
