Last nights Salmon Croquettes and Chips become Baked Eggs today. Roasted salmon was mixed with salted capers, Dijon, mayo, fresh bread crumbs, and chopped parsley. Molded into croquettes and breaded. Fry in butter and squeeze lemon over. Serve with roasted chips and some citrus and herb spiked yogurt or creme fraiche… some braised mustard greens rocked along side.

The eggs…just whip together eggs, cream,  salmon mixture, & potatoes and set into gratin dishes, drizzle with olive oil or butter + whack in a hot oven until set.
