I have to say I’ve been bone tired. We have a kitten (though she’s 3 years old now- that does not seem to sway her) and a cat that both feel the call of Spring and the frenetic early morning pace of the birds at roughly 5 am. We joke that Claudie is preparing us for future farm life…but at times it doesn’t feel as sweet as that.
Hence, Cinnamon Roasted Chicken Thighs with copious amounts of rice and hot corn tortillas. What I really want when I am this tired is heat and sweetness, and that usually involves some sort of deliciously braised or roasted meat on piles of something soft to soothe me back into reality. (I also want to bang something in the oven without thinking about it)
Massage chicken thighs (bone in + skin on) with extra virgin olive oil, cinnamon, chile, cumin, coriander, and salt and pepper and roast for roughly a a half hour and then pour in some stock after the chicken is browned and let it braise, covered for another rough 30 minutes. Remove cover for the last few minutes to crisp up the skin once again.
Serve with rice and hot tortillas, cilantro, and lime. Beer and/or white wine won’t hurt either.
